If it's the Spoonbill, you don't need to go that far. Paurotis Pond in ENP has them, as does the Flamingo area. Although not in recent weeks, they are sometimes seen in Cutler Wetlands.
If it's the Scarlet Ibis, I'd suggest Trinidad or Brazil. In ten years of birding South Florida, I've yet to see one, and the general belief is that any seen here are escapees and not wild birds. Any thoughts on this?
