The Chekika section of Everglades National Park has lots of polistes wasps nesting under the eaves of the buildings in the main clearing. I believe this section of the park is closed this winter, however, though you may have permits and special access. I have also seen their nests around the buildings at Castelow Hammock in south Dade, as well as the main picnic shelter near the lighthouse at Bill Baggs Cape Florida State Park on Key Biscayne. Good luck.
