Hooded Gulls

I live near the intracoastal in Pompano. For quite awhile I have been seeing laughing gulls in their winter plumage, without a hood. Today I was sitting outside and saw a fairly small gull fly by with a complete black hood. No intermediate phase at all. I thought how did that happen all of a sudden. Am I seeing a different species. Do some get total black hoods before others. It is not even actually spring yet. Are some hooded gulls black all year or do they all go thru phases where they lose the hood. What do you think I saw with a total, complete black hood on March 10. I am just a beginner trying to learn.
