Steve , FWC has done a great job with the Florida Birding Trail maps-go to www.floridabirding trail.com to take a look at the maps and request copies. Dinner Island and Spirit of the Wild are both up by Lake O and Dinner Island is found on the SOUTH FLORIDA map, OkeechobeeCluster.
SPirit of the Wild has its own page on the FWC site. I haven't been to SotW yet,but have a friend (yes he's a hunter) that raves about the wildlife there-he often takes his kids there in the non-hunting season to see the deer, pigs and birds etc.
I have been to Fisheating Creek East on Banana Grove Rd, and saw tons of wildlife, including multiple families of caracara and turkey.This one might even be a no hunt area.
It might be worth considering that hunters have strong numbers and have done a lot to preserve natural areas and wildlife for all of us.
