I've birded Tikal in Guatemala as well as nearby Belize. You can stay at one of the lodges in Tikal and get fantastic birds, mammals, reptiles, Leps, etc. as well as get fantastic archaeological and historical experience as well. I highly recommend it but I wouldn't travel alone in that region if I were a woman. There are any number of tour groups that go there. . . . Have fun.
