There are a couple of options that Gary neglected to mention:
There should be good views of the pond from the left side of the aircraft on most outbound flights. If you thought birding at 70mph was a challenge, try it at 150mph.
The control tower should provide better views than the top of the parking garage. However, I'm guessing that either option will get you decent views from the back of the police car.
As for the provenance of the duck, I'm guessing that it came in on one of the Las Vegas flights that connect through Dallas. A good scope should be able to read the details on its boarding pass.
